Can’t beat cooking over coals it’s the best

Lit the fire too late so was a bit of a challenge as coals cooled. Turned out ok though perfect and juicy no raw bits, just a bit charred on the outside.

Yeah you have to have really hot coals. I had to add more wood as the coals dies down, hence the charring. It was nice. If you have a really nice bed of hot coals you can shovel em right to get that perfect caramilization.
