i think it's hard to compare titles objectively when they're not grouped like-for-like. for example, SS2 is a cracking title in many ways but its 'first person shooting' gameplay/mechanics are far below most of the other titles here, except maybe doom. might as well throw deus ex into the list if SS2 is there.
similarly, goldeneye was revolutionary as a singleplayer title, but nowhere near as complex a multiplayer/FPS/team experience compared to Q3, UT, counterstrike etc.
for me
MP - Quake 3
SP/Coop - rogue spear/ghost recon (original titles, not the modern shite)
RPG - Deus Ex
Horror - Aliens v Predator (1999)
For multiplayer I'm torn between Quake 2 (because I thrashed the hell out of it), Quake 3 and original UT
Single player is another tough call between Bioshock and Half Life
I play Halo Infinite multiplayer all the time, and love it to death, even though it's considered the worst. Single player experience, I really loved Resident Evil 7, because I love survival horror and FPS shooters, it's mixed together. Also, gotta mention Resistance Fall of Man since it was my first time really finishing a FPS shooter campaign.
