get yourself a vortex/kettle koneMate it’s a game changer. Two baskets of charcoal back to back in the middle of the bbq. Get her hot dimmies straight out the freezer around the outside of the grill 45 minutes spin the lid of the bbq every 5-10 mins job done. They come out like they’ve been fried except the pastry’s fluffier like they’ve been baked. Another level

I’ve got the kettle kone, the one that’s basically a pyramid with the top cut off. It’s awesome for wings. Holds 240c+ at grill level with the lid cracked a bit.
