The one where you have to trample five animals is a breeze. Animals are throwing themselves under your horse's hooves all the time.

I can't get the one where you have to shoot three hats off in one dead-eye unless I'm fighting about a dozen lawmen and somehow do it accidentally. The harder I try to hit their hats, the more often I hit them in the middle of the head.
 
I like the challenges but when I play I don't play the story. I load up a save with nothing done but the bare minimum at the end of the epilogue so I can just go around hunting and doing challenges.

The only 2 challenge categories I always complete are hunter and herbalist. Sometimes I will finish survivalist. I always end up with horseman on 9 because I CBF'd breaking every horse breed.

Don’t do the three hats until you progress in the story. Deadeye becomes easier. Wouldn’t worry about that one. Think it’s by Chapter 5.

The Gambler challenges. That’s pure luck. Gambler Number 8 is notorious. Took like hours. Avoided that one as much as I could

Pretty easy though to be honest. Just time consuming.

The general horse spawn point/location is along the Little Creek River, which is North of Strawberry. There’s a clearing that starts around the river, with purple/lavender plants, stay on that field parallel to the river, and there’s plenty of horses.
 
Not all of them and you can hit some organically just playing but no way would I ever try to 100% that game
It’s possible but time consuming, the nicest word to say about it. Hours is spent on one challenge.
Platinum the game last month, haven’t touch a game more or less since. Such a beautiful game. Just incredible experience, and for one that started on PS4 in 2018.
