I don't think it is that hard to understand that the "find my" iphone service doesn't work when the phone is under water but can start to work when the iphone is no longer submerged. Seen as it was found in mud it is quite possible that they located it via gps when the dam water level dropped due to livestock use and/or evaporation. The dog pinpointed where it was.

Not sure what to write in to the show of jubilation when it was on the bank other than perhaps they were happy to discovery it was in fact SMs phone?

As for the media chopper? well the media were desperate for info and they do act like bloodhounds when they get a whiff of something...

Seen as POS was arrested well before the phone was found I would say they had evidence from elsewhere and the phone to them was like a cherry on top when it comes to evidence.
 
IMO the phone 'discovery' was a staged event for the media, with the intent on pressuring POS or other perps/witnesses into confessing or revealing further information. It didn't work, as this didn't happen. We don't even know for sure that this was Samantha's phone. We certainly don't know the connection between the phone / dam location and the crime itself or POS. If there was compelling evidence arising from the phone find, the case would be further advanced than it is currently IMO.

The phone was identified by her husband by reports. But still very strange and why that particular dam, when there are so many dams on that road by the map and more private

Yeah, read the fine print. It will give you the location of the last ping BEFORE it died, or was switched off.
So, if it was switched off or 'killed' before it was taken to the dam it could not have been located in the dam using 'Find My'...
We don't know that the cops used 'Find My' to locate this phone or not.
They may have used other forensic detection methods, e.g. tech sniffer dogs.

Has it ever been confirmed that the phone was ever under water?, we know it was found in mud in a phone case with her cards etc, in working condition, and dams used by livestock have churned mud all around the waters edge. If it was thrown from a distance it may not have made it to the water.

Yeah there are ferals in the cbd (highlight recently was a drunk stripping-off outside Woolies, posing naked on a parked 1940's MG mudguard, then tossing this gigantic, spreadsheets brown eye to the shocked girls at Bakers Delight....but I digress) but have you seen Elizabeth+Flinders St recently? Someone once told me that people in Ballarat are all slightly bitter, and that is definitely true but having lived a lot in the inner ring of Melbourne, where I saw people become gradually more snobbish the older I got, would take these folk any day
