I was sitting there with a pen and paper with A _ _ E _ written as I figured based on earlier tries the word wouldn't start with AE. I actually pictured the word 'ABLE' in my head and that triggered the answer

I was doing similar. I knew from my first guess it had an A&E, then tried to work out where they fitted - got the E slotted in, and based on unavailable letters I was able to lock in the A. Then couldn't think of too many other words that would fit with what letters I had left

I usually try and use ought and earns to give me an idea and also opens up or vowels.

There is an element of luck involved with your first word. But if it strikes with 3 letters you are on a good thing first off.
