A freestyle stick, like FIFA, gives the ability to blind turn, fake runs/handpasses, dodge and weave and all that jazz. Preferably the right thumbstick holding the left trigger.
Also a bumping/tackling stick when you do not have the ball. Like NHL, slam the right thumbstick to bump, also use it when tackling, but to tackle it requires holding of the left bumper.
Right bumper to change players. When you have the ball you can also change players, letting the AI run ahead with the footy, leaving you to lay some good sheppards. These sheppards will be more effective than you taking total control of the ball carrier and letting the AI to bump. This factor will encourage more people to use this tactic.
Dribble goals and stab passes will be created by also holding the left trigger and pressing Y/A. Hold the button too short/long will see a dribble pass miss before the goals or dribble past it. The same for a stab pass will see the ball drop short and the the ball either kicked past/over the receiver.
Have a power bar for handballing, where you have to judge the right distance.
For goal kicking, have something like FIFA where you have to hold for the right power on the right angle, too much power and you spray it, comepletely wrong angle you spray it. Obviously it will be easier than FIFA.
For marking, have the player time his run, using the right thumbstick to fend off like before, but then have the player hold the left bumper and then using the right thumbstick to mark, holding up for overhead, down for a half volley mark, and in between for a chest/out in front grab. Also left/right will push off an opponent. (The player can choose to turn this on if they are finding the classic marking system too easy).
Also make the game a bit more smooth, better ball physics and you are laughing. I don't care about anything else, just these things which will make the game harder and more fun to master.
