What cooking shows / YouTube channels do you watch &/or draw inspiration from? Or are you more of a cook hooky kind of guy?
My mates & i that like to cook always share YouTube channels we find interesting. There’s a lot of content out there.

Often my when the family is in bed & I’ve had a few beers, outside of David Letterman clips & Seinfeld bloopers my late night go to is late 80’s early nineties cooking shoes like Rick Stein & Keith Floyd.

It really depends, I used to watch a lot of youtube cooking channels but I tend to buy books these days.

I tend to get inspo from instagram, i follow more restaurants than people these days, and then will go about recreating stuff I think looks good.

I also do grow a fair bit of veggies at home and only shop at preston market so I tend to be inspired to use what I have or what's in season.

From youtube tho, there are a few that I watch while I'm cooking like:

also been listening to the podcast recipe club:

I discovered Kopi Bali back in the mid 80s when I first started going to Bali regularly. It's basically locally grown Robusta beans that they roast to within an inch of their lives and ground super finely, although the taste doesn't come off as burned.

The coffee is often served black, stirred with hot water and the silty powdered coffee is allowed to settle in the cup (there will always be a few floaters). I'd occasionally drink it with sugar (gula), but a bit of condensed milk was my preferred option.

I've been to a couple of plantations and I've enjoyed Kopi Bali every time I've drunk it. An Indonesian friend from work used to get Javanese coffee sent over by his family and he'd bring me some now and again so on a trip to Bali I bought a couple of kilos of roasted beans to bring home and to share with him. I declared the coffee at customs, while my wife went through the nothing to declare queue (I also had her share of the duty free scotch).

They must have noticed that I'd been to Bali half a dozen times in the last 2 years and that caused me to be taken into a special room at the airport where I was questioned and probed using a stick, sniffed by a dog and I was made to unpack my bag onto a large stainless steel table. I had to take the lining out of shoes, turn socks and jocks inside out, flatten out all clothing (which was all sniffed by the dog). It took over an hour. My wife was told that I was under arrest but nothing else until I was set free with my coffee and two litres of scotch. Strangely, they never even mentioned the alcohol being above the limit for one person.

But the coffee was very much the focus of a lot of attention (it was not commercially packaged and it was not Kopi Luwak). I had bought it directly from the farm, straight out of the wok they roasted it in and it was packed into paper bags.

I am most relieved that the border security person didn't pull out the rubber gloves.

Ethan Chlebowski is incredibly underrated. Deserves more success.

Still laugh at Kingy's story. Big night after a game and a few of the boys hit a pizza shop. Pizza cook was slicing Micky Martyns and asked him do you want it cut in 6 or 8. Cut in 6 Micky said - I couldn't eat 8.

Wife and I have been finding ourselves exhausted from the work week recently, so have really put value into quick meals.

My favourite at the moment is the 'midnight pasta'.

Saute some garlic, chilli, onion. Add some water so the garlic doesn't burn.

Then add a few parsley stems. Once it's all bubbling nicely, drop your spaghetti or other long pasta into the pan. Probs won't be enough water at this point but hold tight for 4 mins or so. Add some more water and then your aim is for the spaghetti to cook at the same time as the water almost fully evaporates.

Remove it from the heat, add some finely chopped parsley leaves and some lemon zest. Dish it up and put some grated parmesan on it.

Nice little one pan meal that feels like a high end pasta.
 


Chill cooking show by this dude called Andy. Great for beginners like myself. This pie takes about an hour overall (not including cooking time) and I move very slowly in the kitchen.

Old school share house approach, put one slice on top of the other, upside down, to form a sandwich and freeze wrapped in foil.
When hungry another day take it out, remove the foil and put it in a sand which press.
Great toasty. My brother adds an extra layer of cheese before freezing.
 
Had a Beef Rendang at the Glenferrie Hotel near the cnr. Glenferrie & Burwood rd. the other day. 11 / 10 !

Wife no.1 made it frequently and scoffed alot in Jakarta / lndo down through the years. But this was top notch.
Next time, put any leftovers into a Chinese takeaway container and send them to me. I'll PM my PO Box number.
 
Has anyone tried Yoi? Best Indonesian (Bali) style food I have had in Melbourne and cheap. Cafe style, nothing flash, but fantastic food.

Grandmas Fake Mayo

2 Eggs
2 Tsp Keens Mustard Powder
Half Cup Sugar
3rd Cup Milk
3qtr Cup Brown Vinegar
2 tsp Plain Flour

Combine all ingredients except flour in a medium saucepan and whisk or beat well.
Over a low heat, stir ingredients slowly until mixture begins to bubble with the whisk.
Remove from heat & add flour continue to stir a further minute.
Pour into some jars immediately, stick it in the fridge (lids off) to cool.

Use sparingly on salads, fish, etc as it's pretty sweet.
 
Stick some home-made kimchi in as well 👍
