Watching "Cooking with Alice" the other night, she cooked corned beef. This is not a favourite of mine although I don't mind it cold on a sandwich.

However, she cooked what she described as the traditional accompaniment - mashed potatoes.

I objected vehemently, pointing out that the real traditional accompaniment for corned beef is cabbage.

My wife did not know that.

I suppose that's the thing when you marry someone who is over 40 years younger than you are.

Made pizza the other day. I got my son to make the dough. The recipe says 460g of flour but the pack is a kilo so I said to him, go to 500g and just add a bit more water to compensate.

He wacked in a hundred mL extra!!!

My wife always makes her bread dough extra hydrated but I don't think she's ever gone that far. The pizza dough was extremely sticky and very soft. I expected a disaster but seriously, it was actually quite easy to stretch and it came out of the oven beautifully. A bit crisper and not super puffy but a very nice texture and well formed bubbles.

Dough recipe has been modified accordingly...

Splash in some extra water - a bit more than you think you should add!

Higher hydration tastes fantastic, just got to work with it a bit more.
