It’s obvious that this class is to much for young westy so as of Monday he will be getting dropped down to the WAFL so his pathetic attempts at keeping up don’t negatively impact the progress of others

Well varied the temp to 65 and lowered the time to 65 which means a 65/65 egg. Slightly over cooked, the whites just a tab but the yolks weren’t as free flowing. I’m going to wind the time back to 63 and see how that works.

The great thing about food discussion is the varied topics. I know eggs are protein but I’d like to cover all of the food groups. Carbs is going to be huge, POTATOES especially. In that today is Friday and traditionally Fish n Chip night does anyone want to comment on their favourite Batter? I’m huge on light batter Tempura style. What’s yours?

I'm like you, I prefer a light batter that doesn't over power but is still nice and crispy.

Slow cooked honey,garlic,chicken and veggies.



Ingredients
  • 8 bone-in, skin-on chicken thighs
  • 16 ounces baby red potatoes, halved
  • 16 ounces baby carrots
  • 16 ounces green beans, trimmed
  • 2 tablespoons chopped fresh parsley leaves
Nice one Mesc . It is very important to get the bone in, skin on thighs when making this sort of stuff.
 
The irony of these rockapes copy and pasting recipes in here, when we all know they’d spend weeks bitching about the food prepared for them on-site, then live on KFC in their time off.

Indeed. The lighter, thinner tempura type is the go. Many people make the mistake of thick heavy batter that absorbs all the oil, becomes greasy, then soggy and more pastry than fish.. Bleh!

Thin and crispy is the way with 90% fish to 10% batter. The Japanese are onto it there.
