Only time you do is if its a sky punt and you are protecting it from being downed inside the 5

Most kickoffs are to just change possession. kicking into or through the endzone will have the other team start at the 25. The kickoff team runs through the endzone because its just something that happens to be a habit type thing. finish the play and dont quit early on the play. the Special teams coach will not play someone who will quit early. and just to keep the mentality of acting like it was a live play and finish the run.
