Oven-Baked-Chicken-Breast_8-1.jpg
A medium chicken breast will take 18 – 20 minutes to bake at 220C / 425F. Cooking it hard and fast at a high temperature is the secret to gorgeous caramelisation and ultra juicy chicken inside. No dried out breast around here!!

The seasoning for this chicken is actually a really great indicator for when the chicken is cooked to perfection. Basically, once the surface of the chicken is caramelised, it’s cooked to perfection inside so get it out of the oven!

My last tip for a truly great Baked Chicken Breast is to pound it to even thickness, either with a rolling pin, meat mallet or even with your fist (very therapeutic). This has the double effect of even cooking as well as tenderising the meat.

When it comes to the old gas vs electric debate what does everyone prefer? I've always used gas for both ovens and stoves.

Do anyone here use an induction stove? How do they go?

They say gas ovens have more moisture while electric is a dryer heat and can achieve crispy results but I've never had any issues which getting crispy results with a gas oven.

I suppose one thing with gas ovens is you can't get them what that self cleaning mode, but I'm not sure how well that really works.

If you’re a hummus fan like me, then this recipe for loaded hummus is gonna be perfect for you. We added some spiced lamb on the top, and because I am going through a major lamb phase I can’t get enough. I love the added protein to the hummus because now you basically have a really awesome lunch, or a beautiful plate that is perfect as an appetizer and pairs to well with a nice crisp beer. Serve with some pita or crackers or whatever delicious carb you like and you’re good to go! :) Enjoy!

My 60/60 eggs are now 60/65. Still needs a little finessing but getting there. I’m sure I’ll have to work in increments of 1 so there going to be some update posts.
