You have entirely too high an opinion of road users. Possibly not much appreciation of how much faster a 5 second car is than a 7 second car (that many folks would consider brisk and seems to be the base-line of EV performance)? Admittedly the speed of these cars is currently being used as a marketing point and something to try and sway people to trying these types of vehicles out, perhaps mass adoption will see the typical EV with more sensible performance.
It's like going from shooting a .22 to a .308. In principle it's the same thing but the experience of doing it is very different.
There are stacks of accidents where folks race the lights. They will keep racing the lights in their EV's but they will be going significantly faster. I'd much rather get t-boned at 70kph than 100kph...k.e= 1/2m*v2 and all that. People will continue to make miscalculations or flat out poor decisions on the road.
I'm not saying the cars are inherently dangerous. I'm saying many drivers don't possess the skill set to safely operate something with that much mumbo and the inclination to work at acquiring the skills to do so - like an enthusiast would - will vary greatly in the broader population.
I think EV's are cool as s**t but the attitude and skill level of drivers lags far behind the typical performance of these vehicles. As a road user, it is a concern.

Having spent far too much time and money on modifying performance vehicles in my 20s I most certainly do.
I suppose you do need to cater to the lowest common denominator with these vehicles (which have safety features coming out their ass) but I still don't see the majority going 0-100 in 5 seconds just because the car is capable of it. What I hope though is that more of these cars mean that incoming traffic merging on the fwy will actually do so at the fwy speed limit instead of approaching on someone's passenger door doing 80km/h and trying to find a spot to merge into
