I was down at a farmer's market last weekend and came across alpaca sausages. I wasn't game enough to try them but the mates I was with had purchased some before. Very dry evidently, like kangaroo.On to sausages now.
I have had many a sausage. Always best to stay away from the supermarket variety and visit a really quality butcher.
I must say I have had some excellent sausages in my time. Beef, Lamb, Pork. Even chicken can be okay though some effort is needed in the flavourings to make them less boring. I’ve even had some really interesting duck sausages, and one made from ground venison.
After all that, my favourite remains a really good quality basic English pork sausage. Or the venitian variety with pork and fennel.
What are your favourite sausages I wonder.

I prefer beef sausages with garlic and herbs or to change it up occasionally, red wine and orange csabai.
