Was looking at pigs blood recipes a while back. Common in all peasant cultures that raise pigs for the table.
Some mates slaughtered two pigs in late Autumn and made Black pudding, Boudin Noir and Spanish versions with the blood which they collected.
I was given a French version which had a bit of garlic and grated apple plus dried sage, salt and pepper but no oats which the Irish and English use.
Recipe
Prick the boudin Noir or black pudding a few times. Put in ceramic bowl with a splash of olive oil. Roast in a pre heated oven 190c for 25 minutes with a few chunks of of a peeled granny smith apple. The sausage will leach out some meat that goes nice a crispy and combines with the apple.
Meanwhile boil and mash some spuds with good butter and hot milk. Steam some greens.
Serve a big helping of mash and the baked apple with boudin Noir or black pudding on top with some of the steamed greens. Some nice mustard and cornichons on the side.
If you want to be fancy ya can make a white wine or Calvados sauce from the leavings in the baking receptacle.

There should be a designated area for smelly food. That area should preferably be outside of the building.
