Play around until you find one that fits, simple collars such as the blades collar or Adidas from last year look good on most templates.
I've not seen anyone use Melbourne's current collar, I don't see why that wouldn't work.
Puma, perhaps.

It's not about the style of the collar, it's about having it match the cuffs in terms of thickness.

You're after an aesthetically pleasing template, it generally takes me about 6 tries to get the collar the same style/thickness of the cuffs.

Doesn't match up, needs to be less straight and the gradient is horrible.
The gradient was a quick paintbrushing and I didn't think it came out good but I really couldn't be stuffed doing it better. I'll retrace it similar to Meros sleeves but they were the sleeves I had on my paint template.

"Not being stuffed" is why it looks amateur.

There's the other problem. They were the same shape as your paint template, which wasn't the best either.
Also, sleeves are meant to go down further than below the guernsey (unless rolled up). And aren't straight lines when worn, seeing as you're making a 'realistic' template.

Keep at it, but definitely put the time and effort in to perfecting it. Could be a great template once perfect.

The stitching could probably be thinner as well..

Here, this might look alright.. Try very roughly tracing one sleeve.. without the ripples (same style as your guernsey) and copy and paste it onto the other side.
P.S. I take back my comment about the sleeves being longer than the bottom of the guernsey.

Try closing the gap between the "stitches" as well.
 
New Ps template. Before I add shorts and socks, where should I improve?

The bottom of the cuffs should be further out than the sides of the jumper. Otherwise it looks like a dress. Or someone with muffin-tops.

Thank goodness for that. The back of the guernsey isn't meant to be in front of the shorts :D

It worked when there were no shorts, but when I added them, it looked a bit odd.
 
Here is my current template, new shorts plus I fixed a number of things up:

For some reason the colour's are screwed up, so I am working on fixing the colour issue.

I am quite happy with my template, I have put in hours of effort to get it looking it's best.
It looks like the document colour setting has changed from RGB to CMYK.
