I do a goat cheese, pomegranate and rocket salad. The pomegranate is so good bc it pops and adds a whole different element. So delish!

Sounds amazing. Makes sense - ingredients all local to a particular spot.

I remember growing up we also had a weird clump of thistles growing up one side of the house. Every now and again my Dad would crack it and get Jim’s mowers to chop them and cart them off. Until a random nice lady asked if she could have them because she breeds rabbits that apparently love them.

So. Do you have a good thistle salad recipe maybe with pomegranate that might appeal to rabbits?

Thistle salad

500 gr of thistles
1 tablespoon mustard
1 bunch of parsley
1 lemon
2 tablespoons vinegar
4 tablespoons extra virgin olive oil
salt and pepper to taste

Sounds kinda gross but ask and you shall receive!

(Don’t forget to remove the ribs otherwise it will be even nastier)

That sound just fine other than the unknown which is the thistle part.

Maybe you can make a good salad out of anything with the right flavourants and spicing? Like sand with celeriac and tarragon, or busted concrete with rocket, feta and ground walnuts.
