It varies I'm usually playing with the Switch screen (resting on the couch) with a pro controller. I can't use the joycons separately as they feel awkward in my hands and I just can't use them properly, ditto when they are attached to the Switch itself - it just feels too awkward to hold (like my hands are too far apart, its weird).

I rarely play on docked mode... in fact Super Mario Odyssey is kind of forcing me to do so more often because the game is so big, I need a bigger screen to see everything and know where I'm going. I'm playing partially undocked, but purposely using docked mode to keep playing while charging the Switch itself.

Yeah cool, having only played undocked for 2 minutes I hadn't clicked on to the fact that I can just use the pro even when playing mobile

Using the joycons detached for this game also felt awkward for me initially, but after 2-3 worlds of Mario, it feels second nature now. Still prefer the pro controller, but joycons are really great with this game.
 
Haven't played much due to study but what I have played has been awesome. Game runs smooth as butter and controls beautifully. Nintendo are really on a whole other level with their platformers. I'd have BOTW as my game of the year with Odyssey a close second.
