This thread is quite different to the Saints Disco thread. It is very specific and has an agenda
that the disco thread does not. It's also marked as an "analysis" thread which says it all. :)

Possibly the best finger food ever invented by somebody who is not God ?

Sri Lankan Fish Cutlets. Perfect for watching the game with and go well with a beverage.

This recipe is for baking them but you can shallow fry them too.

My personal fave fish to use in this one is wahoo - difficult to come by, I know .......

Pamcake1's go to allround year round Fush Dush.

Smoked Trout Patties.

1 egg beaten
2 tablespoons panko crumbs
2 potatos peeled, cut into small cubes, boiled (8-10mins)and mashed with some butter or olive oil (no milk).
1 smoked Houqua Trout filetted
1/2 a finely chopped salad onion or the same of shallots about 1 & 1/2 tablespoons (optional light fry before hand)
Salt & pepper seasoning

Mix all together.
(best left to sit for 1/2 a day before using for flavour but can be used straight away).
In Medium heat fry pan oil for frying (olive oil prefered here) a nob of butter in after oil has heated.
(the butter is necessary to get a nice golden browning colour).
Lightly fry to goleden brown on both sides (the ingredients are already cooked so the don't have to cook through.)
Serve hot or cold with the caper mayo as shown above.

Variations; Use canned salmon or any other left over cooked fish.
You can use chopped parsley in mix or some sweet chilli sauce in mix.
smoked eel would also work here too :)
