My keen breading eye tells me there's 2 hand breaded and 2 machine breaded here. Post your nominations for which is which


They all claim to be hand breaded, but if I was forced to get suss on any two, it would be 2 and 4.

1 looks a little suss, but I know for absolute certain that's hand breaded.

3 is beyond question, right?...looks like the handiwork of a Masterbreader.

A hypothesis: I suspect the suss breadings in question may indeed be hand breaded, just with finer crumbs (perhaps even a dash of rye or wholemeal for extra flavour on the darker ones).

I defer to your expertise in this mate, I welcome your thoughts, but I can't help but feel for Groupie_, poor bugger must be going feral missing the chance to weigh in...knowing just how much we're missing the depth and breadth of his breading wisdom.

4th is a poster boy for a soulless machine breading
The 1st one would have also said is machined.. but you say you know for sure it's hand? Must not have been confident in the binding and flattened it with the palm

Ah, I'm starting to see a diversion in hand breading authenticity criterion here.

I was working on the assumption that the weft and weave of the crumb would have been the superior identifier, having seen #1 stacked in serious quantities into the back of a truck ready to take to an event (then deep fried onsite) and known they came out the other end looking that way.

Perhaps there's a stacking factor differential here at play that requires some contemplation?

Stacking them kinda defeats the purpose. May as well be machined at that point. Advantage of hand breading is the batter is looser and more uneven.. oil gets into all the little pockets which produces the fluffy effect and gives you all those golden crispy bits

Can definitely see the difference and how that would be better.

Just to clarify, #1 is individually stacked for transport each on its own many layered rack - i.e. not direct on top of each other - but it has to be made to survive and not come apart en route.

I always think of machine breading as way too fine and dry - almost like dust in some cases - so for me hand breading is partly about the crumb having longer fibres and a soft, fresh texture.

If #4 is indeed machine breaded, it's a way better than average in my experience.
