I'm still trying to wrap my head around:

AISH McCarthy

Same spelling, different pronunciation...
Got a few Irish friends and it seems the "S" is pronounced "SH" depending on the vowels around it...so with the "IS" Aisling is comes out "Ashling", Roisin pronounced "Rosheen". Then we do have Sinead, which is "Shinaid"...so it works in reverse too.

That's awesome. I was trying to figure out how that works.

Aisling = Ashling
Aish = Ash
Irish = eye-rish

haha. Makes perfect sense now...well, makes sense in an Irish Gaelic sort of way.

Try Saoirse - there's a whole cottage industry built on how that's pronounced.
