Carey had 18 disposals and 5 marks, zero tackles, Caven had 20 disposals, 5 marks and 5 tackles.
Caven got us out of a lot of trouble rebounding out from defence. The zero tackles speaks volumes about defensive pressure from Carey that day.

How did his opponent get off him regularly and set up attacks from the back line?

I don't know mate. Nothing went to plan in that game. One of the all time chokes.
One of the greatest days ever.....Didn't feel totally that way at half time, but have to say it was a weird day.
Even when we were being run over, the comeback had a sense of inevitability about it.

If you read Carey's book, he says that there was a sense of nervousness in the rooms at half time that they hadn't put the game away.

Yes, agreed.
During that time North would always get an early jump and manage to hold the hard finishing Crows at bay. There are some very close results during that time between the two sides.
That day they didn't get the jump on us they previously had.
