Yes, we’ve done that too. But probably only a couple of days’ worth at a time.Salt is a natural preservative and has been used for centuries to preserve foods. After I buy a packet of butter I carve off a slab that sits in the butter dish on the bench and is fine for at least a couple of weeks. The rest goes in the fridge. No need for that microwave hullabaloo. Same reason that you don't need to put Vegemite in the fridge.
