Poldark - scenery amazing, enjoyable melodrama. rogues and heroes - what's not to like?
Ozark - just to see more of Ruth!
The Halcyon - relatively unknown WW2 series cancelled after a single season - had a lot going for it, but somehow just didn't make the cut
Alias - ended on a massive cliffhanger - what happened to Michael and Sydney?
Foyle's War - absolutely fantastic Brit history/crime series that could easily have gone further into post war Britain

Not finished yet, but know I'm going to miss it a lot - The Marvelous Mrs Maisel - quirky, funny, creative, wonderful cast - just a brilliantly entertaining show that you can sit back and have fun with.
