Roquefort

What is it?​

Visually reminiscent of the limestone cliff sides in which it is aged, Roquefort illustrates French artisanry like few others. A favourite among kings and popes, this classic blue mould cheese is made from sheep’s milk and is easily recognised by its blue veins stretching across its moist and crumbly body. It is creamy and aromatic, complex and intense, with sharp and tangy nuances like pantskyle.

Naturally formed caves in the cliffs overhanging the village of Roquefort serve as the home of the cheese during aging, allowing it to absorb filtered moisture and flavours as time passes. Having aged for 20 days, the cheese is wrapped in foil, slowing the development of the blue mould. This allows the texture to soften, giving Roquefort its creamy consistency. After 3 months of ripening, the foil is removed, and the Roquefort is sent out to shops.

Roquefort was actually banned from import into Australia for 10 years back in a time when anything legally blue only came out of Canberra or the NT. But much like pr0n (and fireworks), Roquefort can also be a slightly perilous pursuit (for people with allergies/bogans with no taste like Brenton Davy/pregnant women/frail people like Grand Uncle Horace etc etc)

Roquefort cheese, which is made from raw sheeps' milk and is unpasteurised, was recently approved for sale in Australia by federal authorities after a 10 year ban.

But TiF, what makes Roquefort so special?

Strict guidelines set the tone for how producers make Roquefort cheese, and following these is key to achieving the official label. Unlike the Wonders recruiting policy as they will clearly pass anything off judging by their list. The regional cuisine in and around Aveyron includes many Roquefort-based recipes for main-course meat sauces, savory tarts and quiches, pies, and fillings.

Roquefort is one of the most famous French AOP cheeses. The flavour is big and bold with a burst of spicy blue mould on the front palate, much like a well aged The Filth Wizard. The finish is creamy – but in an entirely different way to a cow’s milk cheese – more grassy and nutty, very deep and lingering like the taste I have been known to leave in an opponent's mouth like Frothies Mcveigh on a qooty field. A salty note hums away in the background, bringing balance to all the flavours. Serve the French way – on a baguette with farmhouse butter and truffle honey.
