I roasted some pumpkin, carrots, cauliflower, broccoli, Brussels sprouts, onion, garlic, small Rome tomatoes, and zucchini. What a fabulous combination. And the only way to get Mr. Strig to eat Brussels sprouts.
Great healthy side dish or mixed with a little noodles… Yum.
