Yeah, I've done something like that before. I'll have to do it again taking into account that Mrs m is coeliac, so I'd change the breadcrumbs, she doesn't eat pork, so I'd substitute chicken sausages. No speck is the problem. Have used vegetable substitutes in the past. I'll have to think about it....
