Mostly general sightseeing, might do some of the adventure stuff while I’m in Queenstown because it seems a waste not to.

Depending on how long you are there for:

Queenstown -
Milford Sound boat tour - You can get a bus out of a Queenstown for that (I don't recommend staying in Te Anau even if it's a shorter drive)
Shotover Jet
Fergburger
Queenstown Hill
Plus anything you might want to do around there like paragliding, bungee jumping etc

Arrowtown - historic settlement

Wanaka-
Did a waterfall climb there which was fun

Franz Josef / Fox Glacier


We only did the west coast when we were there, but you've also got Christchurch, Dunedin and Invercargill which I hear are good

I endorse all of the above, though I wasn't fussed with Chritschurch too much (didn't visit the other two towns). Don't skip Milford Sound, whatever you do. Lake Tekapo is worth a quick look if you're in the area.

If you have the coin do a heli-hike on Franz Josef. Epic views all around the chopper as you head up to the glacier.

OK, scratch the heli-hike and just do the standard hike up Fox Glacier.

FWIW, heli-hiking was amazing and is an experience I will cherish til the day I die.
