The point was to make a comparison of two systems where party mechanics take precedence over a literal straw poll of the nation for who the party's candidate should be.
Again, even if Biden went to the convention with the delegates backing him, Harris could stand up at the convention and challenge him and the delegates would be entitled to select her over him. It's not undemocratic it's literally how their system works.

In your scenario, Harris would be laughed out of the room due to her performance in the primaries meaning the democrat voters don't want her. The delegates can vote for who they choose but it is extremely rare that they go against the people entrusting them.
If they had a primary and she won then fair enough. But they haven't and they won't because she'd lose by miles like always.
