I've made them a few times but on one particular occasion I had the base done, blind baked, lemon filling in the base and set. Made the meringue and put it on top, but then just left it for a bit as dinner was delayed and therefore so was dessert...

Turns out uncooked meringue melts at room temperature, turning into a sugary syrup which then hardens in the springform pan. At that point, it is no longer a springform pan 😬

I got the stuff to make it too 😁
I just made the lemon custard and poured it on, its amazing. In the oven now.
I also doubled the amount of lemon juice/rind I love it lemony.
